Some of my crazy experiments with food for better taste, convenience and health led me to this recipe.
Tandoori Chicken:
Chicken breasts (500gms)
turmeric (1/4 tsp)
red pepper (1/4 tsp)
coriander (1/4 tsp)
yogurt (1tsp)
ginger & garlic paste (1tsp)
salt to taste
Fresh coriander paste (2tsp - optional but adds a lot of flavour)
Make slight incisions on chicken breast on one side and mix the above ingredients. Leave it in the refrigerator for minimum of 2hrs (if you have time overnight is preferred).
Set the oven at 350 - 400 degs temperature. Cover the baking tray with aluminuim foil (for easy cleaning). Place the chicken breasts in the tray and bake them until cooked.
The cooking time varies depending on the size and thickness of the breasts. A set of 4 large chicken breasts can take upto 30 mins to bake.
This does not require any oil because chicken is an oily meat and that is also a sign of being cooked when you see the oil coming out of it. Same is true for oily fish such as Salmon and Tuna.
If you do not have an Oven, you can cook it in a skillet but with little oil.
Enjoy this dish for lunch with salad or for dinner with rice/veggies/pasta. Bon apetite!
